  1. In a pan, melt one knob of butter and cook 1 finely chopped shallot (until soft)
  2. Add in 1½ tsp crushed black peppercorns and 1 tbsp red wine vinegar.
  3. Increase heat and boil until nearly evaporated.
  4. Pour 100ml  beef stock and boil until reduced by half.
  5. Add 100ml double cream and 1 tsp of dijon mustard.
  6. Simmer contents for around 3-4 minutes, stirring. Don’t forget to season with a pinch of salt.
  7. Serve and enjoy.
